Beef Tenderloin is on page 11 and is done as an appetizer served on Angel Biscuits (page 46) with a choice of Mustard or Horseradish Sauce. However, Truffle mayonnaise would be a quick different sauce. It is easily made by whisking a small amount of truffle oil into prepared mayonnaise. When making Angel Biscuits for beef tenderloin, I increase the yeast to 1 1/2 tablespoons and cut the biscuits larger.
