This chile is called for in the Fresh Salsa and Guacamole recipe on page 25. They add a freshness to the salsa without being hot. If more heat is wanted, then add a bit of minced jalapeno pepper. Since they are frequently mislabeled in grocery stores, I have included a photo. The bottom chile is the most typical size.
