With the base of the spout at the bottom of the cup, the fat separator allows the meat juices to be removed leaving the fat behind....an essential tool for your Thanksgiving gravy. However, MJ saves this fat and uses it to cook the flour (make the roux) for the pan gravy. GREAT flavor!
